Christmas cookies has been part of Christmas as long as I can remember. I have vivid memories of going to my grandma’s house as a little girl and making dozens and dozens of sand tart cookies. I remember it as chaos and so much fun! Today chocolate marshmallow cookies is our top favorite Christmas cookies! We make them only at Christmas and look forward to their gooey goodness every year. The boys love them and well, so do I! They are chewy, soft, and oh so chocolatey. Pair it with coffee and snuggle next to the wood stove…Christmas never felt so merry! This recipe is an old time favorite passed down from my mother and it is one of the dear memories I have of her. Recently our family spent a day at my husband’s family cabin. Andrew grew up spending time at this cabin. Today he still loves the cabin and nothing feeds his soul like hiking and hunting the mountain around the cabin. On this afternoon we all went and baked cookies while he gathered together his hunting gear. We made our favorites…chocolate marshmallow!

Chocolate Marshmallow Cookies
1 3/4 cup flour
1/2 tsp salt
1/2 tsp baking soda
1/2 cup cocoa
1/2 cup butter or shortening
1 cup sugar
1 egg
1 tsp vanilla
1/4 cup milk
Large marshmallows – halved
Topping: Peanut butter and Chocolate
Cream shortening and sugar. Add egg, vanilla, and milk. Beat well. Add cocoa, baking soda, salt, and flour. Mix well. Bake at 350 for 8 minutes. Place a half marshmallow on top of cookie. Return to oven and bake two more minutes. Cool cookies.
For topping, place equal amounts of peanut butter and chocolate ( I use semi sweet chocolate chips) into bowl and microwave just a bit to melt. No need to be exact here….I just dump and it always works out. It is chocolate and peanut butter, after all which is pretty hard to go wrong with! Stir together and spread onto cookies!
