OUR FAVORITE COMFY FALL FOODS

Fall can be enjoyed more fully when in community. A campfire, a trail hike, an apple picking, a crisp night pierced by those brilliant diamond stars were made for an audience of more than one. And so for us at the studio when we think of fall food, we think of togetherness. Since some dishes taste better in autumn than in summer, we each made a recipe that we return to at this season of the year, and sat down for a luncheon to enjoy them together. After all, didn’t Mom’s hearty soup taste better sitting around the lively dinner table than when warmed up the next day in the thermos? We voted on our favorite, and well, it was a tie for Grace’s ROASTED BUTTERNUT AND COCONUT Soup and Kathleen’s APPLE CIDER. Let me tell, you both of these were SO good.

ROASTED BUTTERNUT AND COCONUT SOUP

 I love fall because of the feelings that come along with it. Feelings of comfort and getting cozy, being cold and becoming warm with yummy foods and drinks. I love trying new soups this time of year especially soups that have fall vegetables in them. This soup is a new recipe for me, but I like it because it is simple yet delightful. SWEET POTATO CHILI

Chili is one of my all time favorite dishes. I remembering requesting this for my ‘birthday meal’ as a little girl! That with my mother’s homemade bread. :-) Chili is comfort food…especially during fall. Throw in sweet potatoes …another of my fall time favorite foods….and the result is so yummy and oh so cozy. FALL VEGETABLES WITH LENTILS
I made this dish for the first time as our anniversary dinner one year and haven’t stopped making it every autumn as it is one of my husband’s favorites.  We eat this as our main course, but it could certainly be a dinner side as well. Finding a farm stand to purchase the acorn squash it relatively simple in October, plus, you don’t have to peel the squash which saves a ton of time! Find the recipe HERE. – Karen

HOT APPLE CIDER

One of my favorite fall foods is hot apple cider. It’s so warming and is the perfect drink to sip when the air turns chilly and the leaves start changing. There are so many great ways to make it, but one of my favorite recipes I learned from my husband’s brother and his wife. It’s super simple and takes only a few ingredients. Following is the easy recipe for my Hot Apple Cider: Pour one gallon of your favorite local apple cider into a crockpot. Add 4 cinnamon sticks, 2 teaspoons each of nutmeg, allspice, and cloves, and two apples sliced star-shaped (just for fun). Simmer until hot then enjoy! Optional: Add a little spiced rum to each glass to kick it up a notch or top it with homemade whipped cream.- Kathleen

PINE CONES

Paint dipped pine cones are a simple way to spice up a fall (or Christmas) table setting and make for an easy DIY project. I picked up a bag of scented pinecones at Michael’s (you can probably find some for free in your backyard) and used some old paint I had left over from the trim in our house. Just dip the pinecones halfway into the paint, shake out the excess and lay it out to dry. Gold or white glitter can be a fun addition for Christmas. – Anna
